Prepare the potatoes

Assemble the gratin
Butter a gratin dish. Arrange a first layer of potatoes, then season with crushed garlic, nutmeg, salt, and pepper. Repeat, alternating layers of potatoes and seasoning.
Add the milk
Pour in just enough milk to cover the potatoes.
First cooking
Cover the dish with buttered aluminum foil and bake at 170°C for about 45 minutes.
Add the cream
Remove the foil, pour the cream over the gratin, and return to the oven for another 15 minutes, until the top is golden brown and gratiné.
