Prepare the prawns
Rinse prawns under cold water and pat dry.
Using a sharp knife, split each prawn open along the back without detaching the shell completely. Remove the vein.
Make the garlic herb butter
In a small bowl, whisk together melted butter, olive oil, minced garlic, lemon juice, lemon zest, parsley, Italian herbs, salt, and black pepper.
Grill
Preheat a grill or grill pan to medium-high heat.
Brush the prawns generously with the garlic herb butter mixture.
Place prawns shell-side down and grill for 4–5 minutes, then flip and grill for another 2–3 minutes until the shells are vibrant orange-red and the meat is opaque and juicy.
Baste with extra butter while grilling for maximum flavor.
Serve
Arrange the giant prawns neatly on a long rectangular white platter.
Drizzle with any remaining garlic herb butter and sprinkle with extra chopped parsley and herbs.
