Instructions:
Grate the peeled potatoes on a coarse grater, rinse with water, then drain well using a sieve.
In a bowl, combine the grated potatoes, beaten eggs, chopped parsley, finely chopped onion and bell pepper, flour, salt, and pepper. Mix thoroughly.
Line a baking sheet with parchment paper and spread the potato mixture evenly.
Bake at 180°C (350°F) for about 25 minutes.
Prepare the Filling:
In a hot pan, sauté chopped onion until translucent.
Add finely chopped chicken, fry until nearly cooked through.
Add diced bell peppers, minced garlic, salt, and pepper. Cook for another 2 minutes.
4. Remove the baked potato base from the oven and cut into rectangles.
5. Place some filling on each piece, sprinkle with Cheddar, and roll into logs.
6. Arrange the rolls on a baking sheet, sprinkle with grated Mozzarella.
7. Bake again at 180°C (350°F) for 15 minutes, until cheese is melted and golden.
