1 ¾ cups (220g) all-purpose flour
¾ cup (150g) granulated sugar
2 tsp baking powder
½ tsp salt
2 large eggs, room temperature
½ cup (120ml) vegetable oil or melted coconut oil

2 tbsp fresh lemon juice
1 tbsp lemon zest (from 1 large lemon)

1 cup (150g) fresh or frozen blueberries, lightly floured

👩🍳 Step-by-Step Instructions
1️⃣ Prep & Preheat
Preheat oven to 350°F (175°C).
Grease a 9×5-inch loaf pan and line with parchment paper (for easy removal).
2️⃣ Mix Dry Ingredients
In a large bowl, whisk together:
Flour
Sugar
Baking powder
Salt
3️⃣ Add Wet Ingredients
Make a well in the center. Add:
Eggs
Oil
Milk
Lemon juice, zest, and vanilla
Stir gently until just combined — don’t overmix!
4️⃣ Fold in Blueberries
Gently fold in blueberries (tossed in flour).
