Lemon Butter Scallops

1. Prepare Scallops – Pat scallops dry with paper towels (very important for a golden crust). Season lightly with salt and pepper.
2. Sear – Heat olive oil and 1 tbsp butter in a skillet over medium-high heat. Place scallops in the pan (don’t overcrowd) and sear 2 minutes per side until golden. Remove and set aside.
3. Make the Sauce – Lower heat, add garlic to the pan and sauté for 30 seconds. Stir in remaining butter, lemon juice, and zest.
4. Combine – Return scallops to the skillet, spoon the lemon butter sauce over them, and cook 1 more minute.
5. Garnish & Serve – Sprinkle parsley on top and serve with lemon wedges.
