Step 1: Cook the Aromatic Rice
1. Rinse rice until the water runs clear.
2. In a pot, bring water/stock to a boil with cardamom, bay leaf, cinnamon, and salt.
3. Add rice, cover, reduce heat, and simmer for 12–15 minutes until fluffy.
4. Remove spices before serving.
Step 2: Prepare the Coconut Curry Base
1. Heat coconut oil in a deep pan.
2. Add onion and sauté until soft and golden.
3. Stir in garlic, ginger, and chili. Cook for 1 min.
4. Add curry paste + turmeric. Toast until fragrant (1–2 mins).
5. Stir in tomato and cook until softened.
Step 3: Add Coconut Milk & Simmer
1. Pour in coconut milk and mix well.
2. Season with fish sauce (or soy), sugar, and a squeeze of lime.
3. Simmer for 8–10 mins until slightly thickened.
Step 4: Cook the Shrimp
1. Add shrimp to the simmering curry.
2. Cook 3–4 mins until pink and opaque (do not overcook).
3. Taste and adjust seasoning (extra lime or salt if needed).
