• 4 endives
• 2 tbsp olive oil
• Juice of 1/2 lemon
• 1 tsp sugar (optional, to soften bitterness)
• Fresh thyme sprigs
• Salt and black pepper
Preparation:
Prepare the endives
Remove damaged leaves if needed.
Cut the endives lengthwise.
Remove the hard core at the base if you prefer less bitterness.
Sear
Heat olive oil in a large pan.
Place endives cut-side down.
Let them brown over medium heat for 5–6 minutes without moving.
Braise
Flip the endives carefully.
Add lemon juice and sugar if using.
Season with salt, pepper, and thyme.
Cover and cook on low heat 15–20 minutes until very tender.
Add a splash of water or broth if needed.
Finishing
Serve the endives and spoon over the lemon cooking juices.
Garnish with fresh thyme, lemon zest, or Parmesan shavings if desired.
