Prep the endives
• Remove wilted leaves
• Slice lengthwise
• Take out the bitter core if you prefer a milder taste
Sear 🌟
• Heat oil in a skillet
• Place cut-side down
• Brown 5–6 minutes without moving for a deep golden crust
Braise
• Flip gently
• Add lemon juice + sugar
• Season + add thyme
• Cover and cook 15–20 minutes on low until meltingly soft
• Add a splash of water/broth if needed
🍽️ To serve
• Plate the endives neatly
• Spoon over lemon-thyme juices
• Finish with fresh thyme, lemon zest, or Parmesan 🧀
