Ingredients:
• 500 g ground chicken
• 60 g breadcrumbs (or blended oats)
• 60 g grated Parmesan cheese
• 1 egg
• 2 garlic cloves, finely minced
• 1 small onion, grated or finely chopped
• 2 tbsp fresh parsley, chopped
• 1 tbsp mild or whole-grain mustard (optional)
• 1 tsp oregano or Italian herbs
• Salt and pepper, to taste
• Olive oil, for greasing the pan
Preparation:
Preheat oven to 180°C (fan-assisted).
In a large bowl, combine ground chicken, egg, breadcrumbs, Parmesan, garlic, onion, herbs, mustard (if using), salt, and pepper.
Mix well until uniform.
Shape into an oval or compact loaf and place in a lightly greased loaf pan (or on a lined baking sheet).
Optional: sprinkle extra Parmesan on top for a crispy crust.
Bake 40–45 minutes, until golden and fully cooked. Internal temperature should reach 74°C.
Serving suggestions:
Serve warm with mashed potatoes, roasted vegetables, or a fresh salad. Also delicious cold, sliced in sandwiches or salads.
