Preheat your oven to 350°F (175°C).
In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
Add the chopped onion and minced garlic to the skillet, cooking until the onion is translucent.
Stir in the cream of mushroom soup and sour cream, mixing until well combined. Season with salt and pepper to taste.
Spread the beef mixture evenly in a 9×13 inch baking dish.
Sprinkle 1 cup of shredded cheddar cheese over the beef mixture.
Arrange the frozen tater tots in a single layer on top of the cheese.
Bake in the preheated oven for 30 minutes.
Remove the casserole from the oven and sprinkle the remaining 1 cup of cheddar cheese over the tater tots.
Return to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.Let the casserole cool for a few minutes before serving.
