Banana Pudding Cheesecake

🧑‍🍳 Instructions

1️⃣ Prepare the base
1. Mix the crushed biscuits, melted butter, and brown sugar in a bowl until it resembles sand.
2. Pour the mixture into the bottom of a 9-inch springform pan and press down firmly to flatten.
3. Set aside.

2️⃣ Make the chocolate layer
1. Place the chocolate pieces in a bowl.
2. Heat the cream in the microwave or in a small saucepan (do not boil, just steam).
3. Pour the hot cream over the chocolate and stir until it reaches a ganache consistency.
4. Spread it over the base once it has cooled slightly.
5. Refrigerate briefly to allow the chocolate to set slightly.

3️⃣ Prepare the cheesecake filling
1. In a large bowl, beat the cream cheese and sugar for 2–3 minutes until smooth.
2. Add the vanilla and sour cream and mix again.
3. Add the mashed banana and half of the walnuts/pecans, mixing with a spatula.

4️⃣ Assemble the cake
1. Pour the banana cheesecake mixture you prepared over the chocolate layer.
2. Spread evenly on top.
3. Cover the pan and refrigerate for at least 6 hours, preferably overnight.

5️⃣ Topping & Serving
1. Just before serving, arrange thinly sliced bananas on top.
2. Sprinkle the remaining walnuts on top.
3. Drizzle with honey if desired.
4. Unclamp the mold, slice, and serve cold.
