In a large skillet or cast-iron pan, cook chopped bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the drippings in the pan.
Add diced onion to the bacon drippings and sauté until soft and translucent.
Stir in minced garlic and cook for another 30 seconds until fragrant.
Add chopped cabbage to the skillet, stirring well to coat it in the bacon drippings.
Season with salt, black pepper, paprika, and red pepper flakes if using.
Cook uncovered for 10–12 minutes, stirring occasionally, until the cabbage is tender and slightly caramelized.
Return the crispy bacon to the pan, mix well, and cook for another minute to warm through.
