Velouté of Endives and Potatoes

Ingredients (serves 4 bowls):

• 4 endives
• 3 medium potatoes (Bintje or similar)
• 1 onion
• 20 g butter
• 750 ml vegetable or chicken broth
• 100 ml heavy cream or crème fraîche
• Salt, black pepper
Optional: croutons, fresh herbs (parsley, chives), nutmeg

Preparation:

Prepare the vegetables
Finely slice the onion.
Wash endives, remove the base to reduce bitterness, and cut into pieces.
Peel and dice potatoes.

Cook
Melt butter in a large pot.
Sauté onion 2–3 min until translucent.
Add endives and potatoes; cook 5 min over medium heat.
Pour in hot broth, cover, and simmer 20–25 min until vegetables are tender.

Blend
Off heat, blend until smooth.
Add cream, season with salt and pepper.
Heat gently 2 min if needed.

Serve in bowls. Top with cream, pepper, croutons, and herbs if desired.
