🥘 Moroccan Couscous with 7 Vegetables
🧂 Ingredients
300 g couscous
1 zucchini, diced
200 g cooked chickpeas
2 carrots, cut into sticks
2 small turnips, peeled and chopped
1 large potato, cut into chunks
1 piece of pumpkin or squash, cubed
2 grated tomatoes
1 large onion, finely chopped
2 tbsp olive oil
1 tsp turmeric
½ tsp ground ginger
1 tsp black pepper
Salt to taste
A few saffron threads or saffron coloring
1 liter vegetable broth or hot water
A handful of chopped parsley and cilantro
