Twice-Baked Potatoes Recipe

These Twice-Baked Potatoes are crispy on the outside, creamy and cheesy on the inside—perfect as a side dish or even a main meal.

Ingredients

  • 4 large russet potatoes

  • 2 tablespoons olive oil

  • Salt & black pepper (to taste)

  • 3/4 cup sour cream

  • 1/2 cup milk or cream

  • 1 cup shredded cheddar cheese

  • 4 tablespoons butter

  • 2 green onions, finely chopped

  • Optional: cooked bacon bits, garlic powder, paprika

Instructions

  1. Bake the potatoes
    Preheat oven to 200°C (400°F).
    Wash and dry the potatoes, rub them with olive oil, and sprinkle with salt.
    Bake directly on the oven rack for 50–60 minutes, until tender.

  2. Prepare the filling
    Let potatoes cool slightly, then cut each one in half lengthwise.
    Carefully scoop out the inside into a bowl, leaving a thin shell.

  3. Mix
    Mash the potato flesh with butter, sour cream, milk, salt, and pepper until smooth.
    Stir in cheese, green onions, and bacon if using.

  4. Second bake
    Spoon the mixture back into the potato skins.
    Sprinkle extra cheese on top.
    Bake for 15–20 minutes until golden and bubbly.

  5. Serve
    Garnish with green onions or sour cream and serve hot.

Tips

  • Add mozzarella for extra stretchiness

  • Use cream cheese for an even richer filling
