Ingredients
100 g butter (room temperature)
175 g sugar
1 egg
A pinch of salt
A few drops of vanilla essence
200 g flour
4 g baking powder (Royal yeast)
100 g chocolate chips (or chopped chocolate bar)
Preparation:
Prepare the Dough:
In a mixing bowl, beat the butter and sugar together until the mixture becomes light and fluffy (it should turn pale in color).
Add the vanilla essence, a pinch of salt, and the egg. Mix well until fully combined.
Sift the flour and baking powder together, then gradually add this to the wet ingredients. Mix until just combined (avoid overmixing).
Gently fold in the chocolate chips until evenly distributed throughout the dough.
Form the dough into a ball, wrap it in plastic wrap, and let it rest in the refrigerator for at least 30 minutes. This helps the dough firm up and maintain its shape during baking.
Shape and Bake:
Preheat your oven to 190°C (375°F).
Lightly flour your work surface and rolling pin. Roll out the dough to about half a centimeter thick.
Use a cookie cutter or a glass to cut out circles from the dough.
Place the cookies on a greased or parchment-lined baking sheet, leaving some space between them to allow for spreading.
Bake in the preheated oven for about 7 minutes, or until the edges are just starting to turn golden. Be careful not to overbake, as the cookies will continue to firm up as they cool.
Cool and Serve:
Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
